x6 Chicken thighs
250g or as many as you likebaby potatoes
x1 onion
x3 cloves garlic
A lot of olive oil
100g Mild mustard
70g Chicken/ veggie stock
x2 lemon
x2 lemon's juice
salt, black pepper, cayenne pepper
1 tbsp each thyme, savoury

Make the marinate with the olive oil, lemon juice, salt, pepper, stock and split it into two bowls.
Marinate the thighs, cover them with cling film, and let them rest on the fridge overnight.
Wash the potatoes, cut them into small pieces (see video) and marinate them onto the other bowl.
Preheat the oven at 180c fan.
In a tray, place baking paper onto the bottom, cut the juiced lemon into pieces and add it, following with the potatoes and spread them evenly. On top place the chicken and scrape all the left over with a silicon spatula.
cover with tin foil and cook for around 30 minutes.
remove the tin foil and cook for further 40-50 minutes depending or untill everything is cooked. Make sure you rotate and mix every 15 minutes.
