Fava (Yellow split pea dip)

200g Dried Fava (Yellow split peas)

2L water (1L for soaking and 1L for cooking later)

1 Carrot

2 Baby leek/leek

2 cloves Garlic

1-2 pcs (Celery)

1 onion

1 lemon

2 Bay leaves, 6pcs Pimento/ Allspice

olive oil

salt, pepper

Thyme, Rosemary

Παρασκευή

  1. Soak your Fava into 1L of hot water and cover it with clingfilm. Leave it for about 45 minutes.

  2. At the same time prepare all of your ingredients.

  3. After the time has passed, strain the Fava.

  4. Into a pot with olive oil, turn on the heat.

  5. When it is hot, add the veg. When soften, add the fava and cook for further 1 to 2 minutes.

  6. Add 1L of water, the spices and cook into medium heat for about 50'.

  7. When the times has passed start blending with the herbs.

  8. Finally season with the lemon juice and zest.

  9. Enjoy!
