Patatokeftedes - Potato bites

10 Small to Medium Potatoes

2 tbsp Creme fraiche

2-3 spring onion

1/3 dill bunch

1 egg

1 & 1/2 tbsp Lemon juice

100g Feta cheese

50g Olive oil

1 tbsp Spearmint

1 tbsp Savory

1 tsp Black pepper, salt


Dressing

Mayonaise

Creme fraiche

Παρασκευή

  1. Wash the Potatoes under cold running water.

  2. Cut them in quarters or half them if they are small.

  3. Add them in a pot with cold water and a good amount of salt.

  4. Start with strong heat until they come to a boil and then reduce to medium and keep cooking.

  5. When you can pierce them with a sharp knife or cake tester and it comes out clean and easy, then they are ready.

  6. Strain them and run them under cold water until they are not very hot.

  7. Turn on the fryer or heat up a pot with oil around 180c.

  8. After this step, transfer them into a bowl.

  9. Prepare the rest of the ingredients and add them into the bowl too.

  10. Mix well and shape them into bowls of your liking.

  11. Dip them into flour and start frying until they reach golden brown colour.

  12. When they are evenly and nicely coloured, transfer them into kitchen paper and let them loose the excess fat.

  13. When all of them are done and ready, Serve them with some Mayonaise mixed with creme fraiche.

  14. Enjoy!
