2 whole pumpkins or 800g (whole)

Spring onions or onions 100g

1 garlic clove

60g Olive oil

50g White wine

Salt, pepper

Παρασκευή

  1. Prepare the vegetables as shown on the video below

  2. Trim and seed the pumpkin and cut it down

  3. Sweat off the vegetables, add the pumpkin.

  4. When the pan gets really hot, deglaze with white wine

  5. Fill up with wateer and cook until you can pierce with a sharp object and come out clean and easy without resistance.

  6. Blitz without any of the liquids in the pot and if it is too thick add a little bit.

  7. while you blitz add the olive oil slowly, season and preserve.
