250g Flora (Ve. Butter) (in room temprature)
400g Caster sugar
3g Baking powder
500g Plain flour
4g Cinamon powder
2.5g Cloves powder
5g Vanillin powder or 2g Vanilla paste
Zest of 2 Oranges
5 Egg yolks
5 Egg whites
1 pinch of salt
120g Orange juice
2g Bicarbonate of soda
140g Milk or Oatmilk
40g Cognac
10g Rose water
10g Blossom water
icing sugar for decoration.

Add the soft butter in a mixer bowl.
Start mixing with the paddle attachment and then add the sugar little by little until all of it is incorporated but keep some of it like 50g for later.
Warm up the oven on fan at 160c.
Then add the Cinamon, Cloves, Vanillin and the orange zest and mix well.
Add the egg yolks one by one until all of them are added and incorporated.
Add the salt and 50g of sugar the we kept ealier into a seperate bowl with the egg whites and whisk until soft peaks.
Reduce the mixer's speed into no.1. Add the bicarbonate of soda in the orange juice into a deep glass or container as it will foam and add it into the mixer mix.
Mix the Milk, Cognac, Blossom water and the rose water into one container and in another container pass the plain flour and the baking soda. Starting adding the flour in to the mixer whilst on speed one and then some of our liquid mix too. Keep adding both mixes into our mixer bowl until all finished. Keep in mind as you have started with the flour and baking soda mix, you should finish with it too.
Make sure you stop every 5 to 10 minutes and mix with a spatula so there is not flour stuck below.
When that is done, take it of the mixer and start folding in the whipped egg white little by little and very gently.
When we have everything mixed and incorporated, transfer our mix into a round tray of 28-30cm with baking paper on the bottom.
Hit well the bottom of the tray with your hand so you eliminate any excess of bubbles and place in the oven. Cook for about 45-55 minutes until you can prick it with a sharp object or a pointed knife and it comes out clean.
Let it chill when it comes out of the oven. Dress it with icing sugar when it is cold and enjoy!
