Garidomakaronada - Pasta in a Prawn sauce

Ingredients

x7-10 pcs Whole King Prawns

1 pac Pasta Linguini

300g Water/ veg stock

80-100g Tomato paste

x5/x1 Tomatoes / Tomato tin

x1 Onion

3 cloves Garlic

80ml Ouzo

x2 (Jalapenos)

1 tsp each Jalapeno powder, Cayenne pepper, Parsley, Oregano, Thyme

1/2 Lemon juice

1 tbsp each Salt, Olive oil


*Serve with the cheese of your preference


To thicken the sauce:

Cornflour (dissolved into cold water)

Preparation

  1. Prepare you prawns by seperating the head from the body and removing the shell. Make sure you keep the heads and the tails in a corner.

  2. Prepare and cut all of your vegetables.

  3. Get a pot with water onto a stove and turn on medium heat for our pasta.

  4. On another pan, get a lot of olive oil and turn on the heat too.

  5. When the oil is hot, add the head and the tails of our prawns. At the same time and in the same pan, sear our prawns very fast. When they get colour from both sides remove them one by one and keep them for later. Keep going with the heads and the tails.

  6. After the have extracted a bit of their colour, add the vegetables and cook until transparent.

  7. At the same time drop the pasta into the pot with water that it has been seasoned with salt and oil.

  8. In our sauce pan, deglaze with ouzo and let on high heat to cook of the alcohol.

  9. Add the tomato paste and cook for a little bit.

  10. Add the tomatoes and around 300g water/ veg stock to cover our vegetables and make the sauce.

  11. Boil further and after 5 minutes start by removing the heads.

  12. Add the prawns back in the pan, add all of our seasoning and the lemon juice.

  13. Dissolve some cornflour (1 tbsp) with cold water in a bowl and drop it in our sauce pan.

  14. Bring it to a boil and reduce to medium heat.

  15. When our pasta is on our preferred cooking result, transfer them into our sauce.

  16. Serve with loads of cheese and enjoy!
