Gigantes bean stew

Ingredients

300g Gigantes beans

1 red onion

1/2 carrot

2-3 garlic cloves

1 leek

400g tomatoes

70g tomato paste

300g Chicken stock

salt, pepper

Parsley, oregano

corn flour/ arrowroot

Extra virgin Olive oil

60ml shiraz red wine

Preparation

  1. Soak the Gigantes beans in a bowl with water overnight or for the minimum 5 hours until they are tripled in size and become very big.

  2. The Morning after we soak them, drain them and place them in a pot with plenty of cold water. Boil them until you can break them a bit with a spoon. (Roughly 40-65 mintues)

  3. Prepare your vegetables.

  4. Start by sweating off you vegetables, deglaze with our red wine, add the tomato paste and cook for a little bit.

  5. Add your tomatos, chicken stock and water and cook further untill your beans are ready and cooked.

  6. Lower the heat and dissolve the corn flour/ arrow root into a glass of water. Mix with a fork and when it is dissolved, Add it to the pot and mix.

  7. Turn on the heat and bring to the boil.

  8. You will see instant results of a thickened and nice Gigantes bean stew!
