x1 Bell pepper or other pepper

x1 Red onion

x4 cloves Garlic

2 beef tomatoes or 4 small size Tomatos

30g Tomato paste

Oregano, Thyme

x4 Eggs

olive oil

Preparation

  1. Prepare all the veg like in the video.

  2. whisk your eggs just to mix well without incorporating air.

  3. In a pan, add olive oil and switch on the head

  4. When the oil is hot, fry the onions, peppers and garlic on medium heat. When translucent add the tomato paste and cook for 1-2', add the tomatos and cooke for another 1'.

  5. Add the eggs and lower the heat a little bit.

  6. Mix from time to time like we do for scrumbled eggs.

  7. Serve with feta and bread.

  8. Enjoy!
