Ingredients
320g All purpose flour
130g Goats/Sheeps butter
160g Icing sugar
190g Toasted Almonds
1 egg yolk
Preparation
Firstly, Melt the butter and let it to cool aside.
Toast the almonds to 200c for about 10 minutes or until slightly coloured and let aside to cool.
Mix the sugar, flour and the egg yolk.
When the almonds are cold, blitz, chop or blend slightly in order to have small pieces.
Add the almonds and then gradually the goats butter.
When a dough is formed, start rolling them on a tray or on a baking mat onto small balls or you can also use a cutter for the desired shape.
Keep in mind they will flatten out a bit and they will expand.
Bake for 20 minutes at 175c whlist checking.
They should be white when coming out of the oven.
Let them cool aside and Enjoy!
