Moustokouloura (Biscuits with Mousto)

Ingredients

280 olive oil

180 caster sugar

6g Baking soda

4g Bicarbonate of soda

800-940g Plain flour

180g Petimezi (mousto dissolved in water) mixed with 180g water or 360g Mousto

20g Mavrodafni or sweet red wine

Preparation

  1. In a bowl, Mix the olive oil and the Mavrodafni with the sugar.

  2. on another bowl, add the mousto or make the petimezi by adding 180g petimezi and 180g water.

  3. on two different bowls, place the baking soda and the bicarbonate of soda seperately. Split the mousto or petimezi mix into those two different bowls and mix with the ingredients seperately.

  4. After activating the raising agents (Bicarbonate of soda and baking soda) by mixing and resting, add all the liquids into one bowl and mix.

  5. in another bowl weigh out the flour. Slowly add the liquids into the flour until a dough is formed. You might need to add more flour if the dough is not greasy enough (see video)

  6. Shape on a baking mat and cookat 170c for 22 min.
