Pork Souvlaki

Ingredients

Marinade:

800g loin dice

Pork fat (from cleaning the loin)

80g Veg oil

50g Lemon juice

20g white wine vinegar

30 mild mustard


1g Nutmeg

1g Cumin

3g Ras el hanout

3g Hot paprika

2g Thyme

2g Rosemary

2g Oregano


During Cooking:

Olive oil + Lemon juice

Black pepper

Salt

Oregano

Preparation

  1. Clean the Pork and remove the fat. You can cut in square the fat and dice the Pork.

  2. Mix all the ingredients together well in a bowl. Wrap with cling film and rest for 12 hours.

  3. Dip the wooden skewers into water.

  4. Start putting through the pork and the fat on the skewers following our recipe.

  5. Grill them untill they are cooked with a nice colour around.

  6. Enjoy!
