Ingredients

500g Pork Neck or Chicken thighs

50g Olive oil

22g Lemon Juice

5g Dried thyme

5g Crushed chilli flakes

6g Smoke/ hot Paprika

1g Cumin

3g Dried Corriander

3g Dried Oregano

3g Savoury

2g (Dijon) Mustard

1 Garlic clove

5g Salt

3g Aleppo Pepper


Small Recipe:

100g Pork Neck or Chicken thighs

10g Olive oil

4g Lemon Juice

1g Dried thyme

1g Crushed chilli flakes

2g Smoke/ hot Paprika

0.5g Cumin

0.5g Dried Corriander

0.5g Dried Oregano

0.5g Savoury

1g (Dijon) Mustard

1/2 Garlic clove

1g Salt

0.5g Aleppo Pepper

Preparation

  1. First, Sharpen your knife. Start cutting the meat into thin strips and let aside in a bowl.

  2. Scale all of your dry powders in the mortar and crush them into a powder. Add them into the bowl with the meat.

  3. Crush the garlic in the mortar as fine as possible and add as well.

  4. Add the rest of the ingredients into the bowl and mix very well.

  5. If you will do a different meat, let aside and repeat the process as we do in the video.

  6. When you are ready, Get a pan on the stove without fat and turn on the heat until it starts to smoke.

  7. with the tong or carefully without liquids, add the meat in the pan and do not stir for a while. Then flip and let to cook. Repeat untill it is cooked and nicely coloured.
