Ingredients
300g dump and strained bread
200g Cod roe (preferably 150g White cod roe and 50g red cod roe)
300g Olive oil
300g Neutral oil
1/2 Red onion (Grated)
season with lemon juice and salt.
Preparation
Rinse and wash the roe.
Grate and place the onions into a shieve. Sprinkle with salt and let them release most of the water.
In a blender, add the roe, the onions and blitz until it forms a paste.
Start adding little of the bread and the oils until it emulsifies and thickens (see video)
If it is too thick add water. Also, have a hand blender handy in case you blender can't handle it.
Season with lemon juice and salt.
Enjoy with some Pita bread!
